Introduction

I adapted this salad from one that I made before. I adapted this salad from one that I made before.
Number of Servings: 4

Ingredients

    4 wide mouth 1-quart Mason jars
    vacuum sealer and wide mouth jar sealer
    OR
    an alternative procedure to vacuum seal the jars

    Dressing:
    1/4 C Water
    1/4 C Red wine vinegar
    2 Tbsp Sugar
    1 tsp Basil, dried
    1 Tbsp Lemon juice
    1 Tbsp Dijon mustard
    1 clove Garlic, minced
    1/2 tsp Black pepper Freshly grounded
    For the salad:
    6 oz Rotini
    1 C Broccoli, sliced
    8 C Romaine lettuce Washed and chop into bite size chunks
    1 can Kidney beans Drained and rinsed
    1 C Carrot Sliced
    1 /2 C Red onion Cut into halves and thinly sliced
    1/2 C Parmesan cheese grated

Tips

You can add more veggies to the salad.
The recipe calls for rottini, but you can choose any other pasta, or whole wheat pasta.


Directions

The lettuce has to be thoroughly dried, otherwise, it is going to wilt.

For the pasta: Cook according to package directions. Drain.

Peel off the hard layer of the broccoli stems, and slice. Steam the broccoli slices and broccoli florets to your taste.

You can steam the carrots, to your taste, or add them raw to the salad.

For the dressing, whisk all the ingredients until well blended.

To assemble the salad in a jar, from bottom to top:
Dressing - cheese - onion - beans - pasta - carrot - broccoli - lettuce

Vacuum seal the mason jar, after assembling the salad.
