Introduction

Number of Servings: 4

Ingredients

    1 carton water-packed extra-firm tofu
    2 Tbs finely chopped celery
    2 Tbs finely chopped scallion
    2 Tbs finely chopped red bell pepper
    4 Tbs vegan mayonnaise
    2 Tbs mustard (yellow or Dijon)
    1/2 tsp ground cumin
    1/2 tsp salt
    Freshly ground pepper to taste

Directions

Drain and squeeze out the tofu very well. Crumble tofu into a bowl and then mix in all of the rest of the ingredients. Refrigerate for at least an hour (optional). Serve with crackers or as a sandwich filling. Yum!
