Introduction

No potatoes, no pasta! This hearty soup will warm your heart and soul on those cold winter afternoons. Great for a weekend lunch. Ingredients

    1 whole chicken, cooked
    Broth from the cooked chicken (approx 6 cups)
    2 cups Raw Carrots, chopped
    1 cup Onion, chopped
    1 cup Celery, chopped
    Salt and Pepper to taste

Directions

Cook chicken in approximately 5-6 cups water to make a broth. Remove chicken to cool, then strip meat from the bones and return to pot. Season broth to taste, then add vegetables and cook until tender - approx, 2 hrs on medium heat.

Serving Size: Makes 8-10 1 cup servings
