Introduction

Ingredients

    1 lb lean ground chicken
    1 lb lean ground turkey
    2 eggs
    2 cloves garlic, minced
    1 small slice low carb bread (I used a bit of flax bread)
    1 tbsp cream and a bit of water, if needed to soak the bread
    1 or 2 tbsp low fat salsa
    1/2 to 1 whole zucchini, minced
    2 green onions, minced
    2-3 tbsp chopped cilantro
    pinch half salt, pepper, oregano
    1 tsp worcester sauce

Directions

In a large bowl, put in your ground meats and add garlic, green onions, salt, pepper,seasonings, cilantro and worcester. Mix together well. Add zucchini, salsa and eggs. Take bread that has soaked in a bit of cream (or milk or water). Crumble bread in and mix it all together. Mixture will be quite wet. Fill muffin tins fairly full, and bake at 375 F for 20-25 minutes. Use a non-stick pan or spray liberally to avoid sticking.
