Ingredients

    4 oz smart balance spread
    1/2 C flour
    1 1/2 C milk
    9 eggs, beaten
    11 oz light cream cheese
    2 C low fat cottage
    1 tsp. mustard
    1 tsp baking powder
    1 tsp salt
    1 C mozzarella cheese
    1 C shredded cheddar cheese
    1/4 C parmesan cheese

Tips

I freeze one. I also add broccoli, onions peppers or anything you like.Recipe calls for Jarlsburg Cheese, but never have on hand so use cheddar/mozzarella.


Directions

preheat oven to 350*. Melt spread in saucepan, add flour. Stir just until bubbles. Slowly add the milk stirring constantly until thickens. Let Cool. Stir B Powder, salt and mustard into cottage cheese.Beat eggs well then beat in softened cream cheese and cottage cheese mixture.Slowly beat in cream sauce, then thoroughly incorporate cheeses. Pour into 2 10 inch pie pans sprayed with Pam. Bake @ 45 mins. until puffed and brown. Cut each quiche into 8 pieces.
