Number of Servings: 8


    Two large sweet potatoes, chopped.
    Two medium onions, chopped.
    One package frozen spinach.
    1 can of white beans (I used Great Northern).
    2 tbsp Better Than Bouillon
    Enough water to cover raw ingredients.


In the photo, it's shown served with a slice of sourdough that was buttered, sprinkled with parmesean cheese, and broiled in the oven for about ten minutes.


Put everything into the crock pot and cook on high for between 4 and 6 hours (until everything is nice and soft). Add whatever spices you like (I used bay leaves, garlic powder, salt, and pepper). Once everything is soft, go through it with a potato masher and stir well.

Serving Size: makes 8 servings.
