Introduction

I tried the Herb Lentils and Rice recipe and it was awesome but didn't like having to baby-sit it in the oven and have to take it out to stir. I love to set it and forget it with my 14 cup large rice cooker. Ingredients

    4 cups chicken broth
    1 1/8 dry lentils, rinsed
    1 1/8 chopped onion
    3/4 cup uncooked brown rice
    1/4 cup plus 1/8 cup white cooking wine
    1 tsp dried basil
    1/4 tsp salt
    1/2 tsp dried oregano
    1/4 tsp dried thyme
    1/4 tsp garlic powder
    1/4 tsp ground pepper
    2 Tbsps olive oil
    6 slices Swiss cheese

Directions

In large rice cooker insert combine all the ingredients except the swiss cheese. Set to cook. When done, divide into six shallow bowls and place a slice of cheese over the top right away to melt. I like to eat this with steamed butternut squash.
