Introduction

A lady at work shared this with me & it quickly became a favorite for me. I often freeze it in small portions and save for when I'm in a hurry & don't have time to pack. Number of Servings: 10

Ingredients

    1 large onion
    2 red peppers
    1 green pepper
    2 garlic cloves
    4 Tbsp. EVOO
    cumin to taste
    coriander to taste
    cayenne pepper to taste
    2 cans or 4 c. chickpeas, drained & rinsed
    3 cans chopped tomatoes
    1 c. coconut milk
    1 c. peanut butter
    1/4 c. lime juice
    1 Tbsp. salt
    1 c. basil

Directions

Saute EVOO, onion, pepers, garlic. Add cumin, coriander, cayenne pepper. Add rest & bring to a boil. Cover & simmer for one hour. Puree half in blender before serving.

Serving Size: Makes roughly 10 1-cup servings
