Introduction

Ingredients

    White (or your choice) rice, short grain, cooked, 1c
    Summer Sausage 2oz
    Orange zest, 1tbs
    Fresh squeezed orange juice, 1/4c
    Cheddar cheese, 7slices (or prefered amount)
    Sweet mini peppers, sliced into strips, 6-9
    Whole-wheat crackers(or prefered type) 6 crackers
    Granny-smith(or prefered) apple- 1med apple, cubed
    Basil, 2tbsp
    Olive oil, 1tbsp
    Soy sauce, 1tbsp
    Teriyaki sauce, 1tbps

Tips

You can substitute the summer sausage for any sort of meat, though I think the sausage gives it a nice summery flavor.

I made this recipe for a siege cooking competition and actually won! It has since been one of my favorite recepies to make, and it's one the whole family can enjoy! Kids love it because of the beautiful colors the apple and peppers lend, and they have fun helping out to arrange the crackers and (for older kids) cutting the apples! It's a very quickly done recipe once you get all of the cutting and cooking of the rice and meat out of the way. Once you get the sausage and the rice cooked, and if you cut it small enough, the apples and peppers tend to cook very quickly! I served this as a main dish, but it can also be a very tasty side dish or appetizer! I (unfortunately) do not have the picture of the actual dish at the time of posting this, but be sure it will be there soon!!!


Directions

1. Cook rice in a medium pan 3/4 full of water on medium.
2. Slice/Julianne sweet mini peppers into strips.
3. Core apple, then dice it into bite-sized pieces.
4. Cut summer sausage into cubes.
5. Cut the cheese into thin/med.-thick slices
6. Put summer sausage into a skillet with the basil and olive oil and cook on med. Heat until brown. Drain off any grease
7. Once the sausage is brown, throw in the apple cubes, peppers, and rice, making sure to drain the rice first!
8. Toss in the soy sauce, teriyaki sauce, orange zest, and orange juice. Cook until the apples are carmelized and the peppers are soft.
9. Serve on a plate with the crackers on the side/around the edge and the cheese on top.

Serving Size: makes about 3 1-cup servings
