Asparagus, fresh, 8 spear, medium, cut into 1 inch pieces
Red Ripe Tomatoes, 2 plum tomato, thinly sliced (romas work too)
Pesto Sauce, 1/3 cup
Feta Cheese, 3/4 cup, crumbled
12" 100% Whole Wheat Thin Pizza Crust
This works well with goat cheese too! It's a little heavier in calories though...divide it into 6 servings if you use goat cheese. It works well with vegan feta also!
Preheat oven to 450. Spread pesto over the pizza crust, top with tomato, asparagus, and sprinkle the crumbled feta over the top. Place pizza on the center rack of the oven (you can use a pizza tray or stone if you wish). Bake at 450 for 10-12 minutes or until asparagus is crisp-tender and cheese is lightly browned.
