Ingredients

    1 Tbsp Coconut Oil
    1 Med Onion, diced
    4 Cups Vegetable Broth, low-sodium
    2 Cups Coconut Milk, unsweetened
    4.5 Cups Frozen Vegetables, Stir fry mix
    2 tsp. Curry Powder
    .5 tsp Dried Red Chile flakes

Directions

Cook onion in coconut oil, until translucent. Add vegetable broth, coconut milk and frozen vegetables. Bring to a boil, turn heat down until simmers. Add spices and simmer 20 minutes.
