Ingredients

- 1 tbsp olive oil
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1/3 cup masala paste
- 1 cup stewed tomatoes
- 1 cup coconut milk
- 1/2 cup red lentils
- 2 handfuls spinach
- Red Pepper Flakes (1-3 tsp depending on how hot you like it!)
Tips
Adjust spiciness by adjusting red pepper flakes. I added a little extra tomatoes to balance out the coconut milk too.
Directions
Heat a skillet over medium heat. Add 1 tbsp olive oil and add diced onion, cooking until translucent (4-5 mins). Add minced garlic and cook 1 more min. Add red pepper flakes (I like things hot so I went up past 2 tsp!)
Stir in masala paste and cook 1-2 mins, then stir in tomatoes and coconut milk. Stir together and bring to a boil.
Add in lentils and reduce heat to medium low. Cook, stirring often, until lentils are tender (20-25 mins). Remove from heat and add spinach. Stir until wilted/combined.
Serve with your favorite grain (rice, naan bread, etc), extra cilantro, or a dollop of greek yogurt!
