Ingredients

    1 5-oz can light tuna (50-cal per serving)
    2 hard boiled egg whites, 1/4" dice (feed yolk to dog or husband)
    3 tbsp. onions, white or green, finely chopped
    1 celery stalk, finely chopped
    1 small dill pickle, finely chopped
    3 tbsp. light mayo (35-cal per tbsp.)
    1/2 tsp. oregano or other herb
    Vinegar or pickle juice to taste
    Salt, and pepper to taste

Tips

Serve on bed of lettuce or stuffed in a tomato. Can add extra celery to expand portion size with just teeny tiny add to calories. If using vinegar, cider is preferred (I made with balsamic once, not such a happy choice).


Directions

Combine tuna, egg whites, onion, celery, pickle, mayo, and oregano (or other herbs). Add vinegar or pickle juice to make desired consistency. Add salt and pepper to taste.

Chill well (or don't but it generally tastes better after a couple of hours in the refrigerator).
