Introduction

Can be made with turkey bacon or regular bacon. Can be made with turkey bacon or regular bacon.
Number of Servings: 10

Ingredients

    2 T butter
    ½ pound bacon (Applegate turkey or regular bacon)
    1 large onion, sliced
    8 cups vegetable stock
    2 cups water
    6 large potatoes, peeled and cut up
    sea salt to taste
    pepper to taste

Directions

Melt butter in a large stock pot. Add bacon and onion and cook till onion is soft and golden. Add vegetable stock, water, potatoes, and salt and pepper. Bring to boil. Reduce heat, cover, and simmer one hour. Remove from heat and let cool. Once cool, process in batches in a blender or food processor until smooth. Return to pot and heat through.
(Garnish with pats of butter and snipped parsley.)
