Introduction
This soup is AMAZING! If you love buffalo wings, you will love this soup -- it's super easy to make, too! If you don't have Miracle Rice on hand, you could substitute 1 cup orzo (not low carb), 1 cup of shredded spaghetti squash, or just leave it out. I highly recommend making your own chicken broth for this recipe -- the canned kind is super high in sodium and just doesn't taste as good. This recipe is calculated using canned broth, but the sodium count will decrease significantly if you make your own broth -- no need to add salt, there's plenty in the other ingredients! Ingredients

2 T butter, unsalted
32 oz - chicken broth (homemade recommended!)
1 - chicken breast, cooked and shredded
1 - package shirataki Miracle Rice
1/4 cup - chopped onion
2 - medium carrots, peeled and chopped
1/4 cup - chopped celery (optional)
1 - clove garlic, minced
2 - tsp Hidden Valley Ranch dressing mix (or your own)
1/2 cup - parmesan cheese, grated
1/2 cup - cheddar cheese, shredded
1/2 cup - blue cheese (optional)
Tips
I leave out the celery, since I'm not a big fan, but I included it in the recipe in case you like it more than me -- I didn't include it in the nutritional info.
I did include the blue cheese in the nutritional info, so you'll want to deduct for that if you leave it out.
Directions
Melt butter in large pan over medium heat.
Add drained and rinsed miracle rice, onion, celery, and garlic, cook 2 minutes until lightly softened and fragrant.
Add carrots and ranch dressing powder. Stir well and cook for 5 minutes, or until carrots are slightly softened.
Add broth, chicken, parmesan cheese, and cheddar cheese.
Bring to a simmer and simmer 10 minutes, or until the carrots are cooked through.
Serve with blue cheese sprinkled on top.
