    1.5 cups of Potato Flakes
    2 cups hot water
    1 heaping tablespoon Chicken Soup Mix
    3 tbsp Whipping Cream or Coconut Cream


During the "low fat" craze .. it was my mother's idea to add the raw egg so the mashed potatoes would whip up nice and creamy. And you can still do this if you don't want the "full fat" of this recipe.


Heat water to boiling. Place hot water in a mixing bowl and add the chicken soup mix. Then add the potato flakes and whisk briskly right away. Add the raw egg and whisk some more, and might need to add a little more hot water (2-3 tablespoons) for the right consistency. Serve immediately.

Serving Size: Makes 4 1/2 cup servings
