Ingredients

    4 stalks celery, diced
    4 carrots, diced
    2 medium onions, diced
    2 tbsp olive oil
    8 c water
    1.5 lbs chicken breast, diced
    2 lb bag frozen sweet corn
    2 cans hominy
    2 hard boiled eggs, sliced
    salt & pepper to taste

Directions

Heat olive oil in large soup pot. Add carrots, celery and onion. Saute about 5 minutes. Stir in chicken and cook about 5 minutes, until chicken is white. Stir in water. Add corn and hominy, cook about 20 minutes. Stir in egg. Season to taste.
