Ingredients

    4 Tbs Light Butter
    14 oz Butterball Turkey Sausage, thinly sliced on the diagonal
    3 1/2 lb Potato
    1 cup onion, chopped
    7 oz Chopped Green Chile
    1 Tbs Crushed Red Pepper


Tips

Try this over an open fire on your next campout. It's a great way to start the morning. Bring pre-boiled potatoes and slice them there.


Directions

Slice potatoes. It's easy to get uniform thickness using a mandoline, and it's fast.
Boil the potatoes until almost done. Drain and set aside.
Spray non-stick skillet with fat free canola oil.
Melt the butter and add turkey. Cook over med heat about 10 minutes, until slices begin to brown.
Add onion and continue cooking until onion is soft.
Stir in the green chilies.
Add potatoes. Cook on med-high until potatoes are heated through and begin to brown, turning frequently, about 15 minutes.
