Introduction

Ingredients

    Peas, Pea, Leek, Leeks, Fresh Cream, Bacon, Smoked Paprika, salt, pepper, italian herbs, olive oil, italian herbs (greens, garlic, chilli, sundried tomato),

Tips

With its mild smokey flavour, this thick and tasty soup is great for cold days. Drop the cream for a healthier option.


Directions

- Roughly chop leaks (it will be blended with the peas so no need to chop perfect discs)
- Roughly chop bacon cuts
- In a saucepan/ soup pot, brown the chopped leaks and cook the bacon together in olive oil. (I remove the fat, or use slim bacon cuts)
- Once the leeks are browned, and the bacon is cooked, add two bags of frozen peas (2kg).
- Add smoked paprika
- Add Italian mixed herbs blend
- Add salt and pepper to taste
- Add 1l of water
- Close saucepan and allow peas to steam for 5 minutes.
- Stir to mix ingredients.
- Cook for a further 10- 15 minutes until peas are soft and cooked.
- Blend all ingredients together to a consistency of your preference. ( I use an immersion blender in the pot)
- Optional: Stir in 200 ml fresh cream.
- Ready to serve!
I freeze portions for later use.
