Ingredients

2 cups oat flour, I use old-fashioned rolled oats, and blended them in a blender to make flour.
1/2 c. Stevia
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 can Garbanzo Beans(Chickpeas)
1 c. Greek Yogurt
1 c. Applesauce(Any will do, I just like the Mott's Cinnamon version)
1 tsp. Vanilla Extract
Half a bag of your favorite chips, I love butterscotch, but they all have almost the same nutrition facts.
Tips
My friend found this recipe on a different website, but I can't find the website, so this is just from memory. Hope everyone enjoys them as much as I do!
Directions
1. Blend your oats to get your oat flour (if you already have oat flour skip this step), and set your oven to 400 degrees.
2. Put oat flour in a bowl, and mix in baking powder, baking soda, and salt.
3. Drain and rinse your chickpeas, and put them in the blender with the greek yogurt, applesauce, egg, and vanilla extract. Blend until smooth.
4. Put liquid mix into the flour mix, and make sure it is thoroughly mixed.
5. Add you chocolate (or butterscotch in my case) chips, and gently mix them in.
6. Using a cookie scoop, scoop them onto a cookie tray, and bake for 9-10 minutes.
Serving Size: Makes over 48 bite sized cookies
