Ingredients

1 Med. onion, chopped fine
1 box whole wheat pasta (elbows, penne, or shells)
8oz shredded cheddar cheese
8 oz shredded colby jack cheese
about 2 cups whole milk
Cooking spray to coat casserole dish
Tips
Great with fresh ground black pepper
Directions
I usually spray a little Pam in the bottom of my casserole dish, but that's probably more borne out of habit than necessity. I use a 9 x 13 glass pyrex dish.
Layer about half your macaroni noodles in your casserole dish and layer on some diced onions and some shredded cheddar and mozzarella cheeses (really, you can use any cheese you have a mind to, but I like cheddar and mozzarella). Make a second layer just like the first.
Pour enough milk over the top of the whole business to come about half-way up the side of the macaroni (if your casserole dish isn't see-through, you just kind of wing this part).
Put aluminum foil over top, tented a little so it doesn't stick to the melty cheese.
Put in a 350 degree oven for 25-30 minutes. Pull off the foil and put back in the oven for another 10-15, so your cheese gets toasty but not burnt.
