A variation of the Light Veggie Couscous A variation of the Light Veggie Couscous
Number of Servings: 2

Ingredients

    Couscous, 1 cup
    Garlic, 1 tsp
    Water, 1 cup
    Parsley, dried, 1 tsp

    Salt, 1 dash
    Black pepper, 1 dash
    Diced Tomatoes, No Salt Added, 1 cup
    Red Bell Pepper, 1 cup
    Bell pepper orange 1 cup
    Extra Virgin Olive Oil, 1 tbsp
    Dried minced onion, 0.5 tbsp

Directions

Boil the water, add couscous, garlic, and dried parsley. Stir together, cover, remove from heat and let sit for 10 minutes. Fluff with fork before serving.

In separate pan, saute the bell pepper strips in olive oil. Add diced tomatoes, salt, pepper, and minced onion. Simmer for about 10 minutes or until desired softness.

Service bell pepper mixture over couscous.

Serving Size: Makes 2-3 single serve meals
