Ingredients

    1 Medium Yellow Squash
    1 Medium Zucchinni
    20 Cherry Tomatoes
    1 Small red onion
    20 Small mushrooms (whole)
    1/4 cup Balsamic vinegar
    1/4 cup extra virgin olive oil
    2 tsp minced garlic
    8 wooden skewer sticks

Tips

Mix up the vegetables however you like--add new ones, take out ones you don't like. This is always a huge hit at cookouts, with even my kids looking for seconds and thirds.
We have also made them without the skewers and just used a large grilling dish, turning the vegetables 2-3 times during the process.


Directions

Slice the squash and zuchinni into 1/2" thick slices and cut those in half down the center. Cut the onion into pieces about 1" square. Remove the stems from the mushrooms. Put all vegetables, balsamic vinegar, olive oil, and garlic in a 1 quart ziploc bag and marinate in the refrigerator from 1-24 hours.
Remove from the ziploc bag and alternate vegetables on the wooden skewers.
Place skewers on grill and cook for about 5 minutes on each side.
