1 1/4 cup Pamela's Ultimate GF Baking & Pancake Mix
1 cup Stone-ground corn meal
1/3 cup Granulated Sugar
1/2 tsp salt
1 cup 2% milk
2 large eggs
2 Tbs butter
Tips
The toothpick test doesn't work for this recipe. It can come out clean when the center of the "cake" isn't done.
Directions
preheat oven to 375 degrees
whisk dry ingredients together
whisk milk and eggs together, pour into dry ingredients and whisk together.
melt butter and pour it into the batter while whisking. Whisk until well blended
Pour into greased 8x8" baking pan
Bake 40 to 45 minutes, or until top is golden brown
Serving Size: Makes 16 2-inch square pieces
