Introduction

Ingredients

2 cups cubed ham
1/2 pkg (12-oz) flat noodles
1 c 1% cottage cheese
3 oz reduced-fat cheddar cheese
1 pkg (16 oz) frozen stir-fry vegetables, or any.
1 medium onion
1 large clove garlic
1T olive oil.
1/4 cup grated part-skim mozzarella cheese.
Tips
Any vegetables, fresh or frozen, can be used. Cabbage is very flavorful, and doesn't need precooking. The more, the merrier.
Directions
Put water on to boil for the noodles.
Sautee the onion and garlic in the olive oil. Add frozen vegetables to thaw them.
Mix everything except the mozzarella in a bowl, including the noodles when cooked (and drained.)
Put the mixture in a flat casserole, or 2 if needed; sprinkle a little mozzarella on top.
Bake covered at 350 degrees for 30 minutes.
