Ingredients

3T +1T Extra Virgin Olive Oil
1/2 C. Onions, chopped
1/2 C. Celery, chopped
1 C. Mixed Mushrooms (I used button and portobello)
1 C. Long Grain Brown Rice
1 C. Dupuy Lentils (Black French Lentils)
2 T. Cumin
1 T. Cinnamon
1/2 tsp. Cayenne
3 C. Kale shreded
4 C. Vegetable Broth
Chopped Parsley or Cilantro to garnish.
Directions
Saute Onions and Celery over medium heat until soft in 3T of Oil
Add Mushrooms and Cook for 5-7 minutes until Mixture is deep golden brown.
Add Brown Rice and Lentils (try to find Dupuy or Black French Lentils as they have the same cooking time and absorbtion ratio as the brown rice). Add spices. Stir to coat with the excess oil and fry for 1-2 minutes.
Add Broth and Kale, cover and cook on med-low heat for 30-40 minutes or until rice and lentils are tender. Stir in remaining 1T. of Olive Oil. top with Chopped cilantro or parsley.
Serve with grilled veggies. Makes 6 healthy portions.
