Ingredients

    1-1/2 cups whole wheat flour
    Â― cup honey
    1-1/4 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon ground cinnamon
    2 egg whites
    1 cup banana, mashed
    1/4 cup applesauce

Directions

Preheat oven to 350-degrees. Lightly grease a 6 cup muffin pan. In a large bowl, stir together flour, baking powder, baking soda and cinnamon. Add egg whites,honey, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
Bake in preheated oven for 30 to 40 minutes, until a toothpick inserted into center of a muffin comes out clean. Turn out onto wire rack and allow to cool

    I donīt know how, but I came out with 12 very nice size muffins (average size?) - couldnīt possibly fit in 6 cups. Wonderful flavor! Iīm glad to find a muffin that is honey sweetened, whole grain, low fat and low cholesterol! Thanks for submitting. - 11/1/12

    Very Good
    These had very good flavor and rose up nice in the oven. I was able to get 11 muffins out of this recipe using a standard muffin pan. - 2/7/09
