Ingredients

    Egg, fresh, whole, raw, 2 medium
    Jimmy Dean Hearty Turkey Sausage Crumbles (1/4 c)
    Asparagus, fresh (4 small spears 5 inches long)
    *Cooking Spray, Pam Cooking Spray (Or any spray oil)
    Deli Sliced Colby Jack Cheese, (1 slice)
    Mrs. Dash (R) Garlic & Herb Seasoning Blend (optional you can use your favorites)

Tips

Serve with green garnish that can be eaten also. With a side of watermelon, (aprox. 23 calories 1 Cup)


Directions

I use microwave poached egg cups. Spray with oil. Place 1/8 cup of sausage crumbles into each cup. Open each egg and place over sausage, pierce each yoke and stir to break up if you prefer the egg a little more mixed. You could also mix the eggs and then pour over sausage. Cover and microwave 1 minute. With small spatula loosen sides and turn eggs 189 degrees. Add chopped asparagus to top of eggs. Top with seasoning of choice and 1/2 slice of cheese. Microwave another minute. Check the cup is completely cooked, (often center is still runny). Cook again for 10 to 20 minutes until egg is set.
