Ingredients

    2-1/2 c.Wheat flour, white, all-purpose, enriched
    7/8 c. Granulated Sugar
    2-1/2 tsp Baking Powder
    3/4 tsp. Salt
    3/4 c. ripe Banana, mashed
    1/8 c. Canola Oil
    1 lg. Egg
    2/3 c. Milk, 1%
    7/8 c. Pecans halves, unchoppped

Directions

Mix dry indgredients. Mix milk, egg and oil. Add alternatley with mashed banana to dry ingredients. Gently stir in mashed bananas. Batter will be fairly dry. Spoon into muffin cups (sprayed or with paper cups) until 7/8 full. Bake at 350 for 20-25 min. Test with toothpick.
