Ingredients

    6 oz Lean Beef Skirt Steak
    1 Can Black Beans (Low Sodium, Rinsed)
    1 Cup Frozen Corn Kernels
    1 Pkg Burrito Seasoning
    1 Can Stewed Tomatoes (No Salt)

    ADDED TO EACH AFTER PLATING:
    (Accounted for in Calorie/Nutrition count)

    1 Tbsp. Light Sour Cream
    1/4 Cup Mexican Shredded Cheese (2%)

Directions

Place Steak, Black Beans, Corn, Burrito Seasoning, and Stewed Tomatoes into Crock pot and cook for 4 hours on high. Take steak out and shred with 2 forks. Place Steak in bowl or plate and spoon bean, tomato, corn on top to cover. Top with 1 tbsp light sour cream and cheese.
