    1 egg yolk
    1/2 tsp water
    2 tbs butter (salted/unsalted), Melted
    1/4 tsp lemon juice
    salt, pepper, chayanne to taste

Tips

serve warm


Directions

wisk water and yolk in double boiler (bowl over boiling water) till thick
add butter, continue to wisk
remove from heat, wisk in lemon
season to taste

Serving Size: makes about 1/4 cup
