Introduction
This is so good served with apple cinnamon chips This is so good served with apple cinnamon chipsNumber of Servings: 12
Ingredients
-
1 medium apple, quartered and cored
1 small can crushed pineapple, liquid drained by half
3 large strawberries, halved and tops removed
1 Tbsp sugar
Directions
Finely chop apple and strawberries. Combine with pineapple and half of the juice. Add sugar and allow fruit to macerate in the refrigerator. Serve with cinnamon apple chips (I like Flat Earths), baked tortillas sprinkled with cinnamon, or anything you choose.
Add other fruits to taste: kiwi, mango, oranges. Bananas would taste great, but won;t keep as long, and this recipe tastes best after sitting to allow juices to flow.
Also, I don't normally add sugar to fruit, but in this case it really helps to bring out the juices. Splenda works fine, as well, but 1 Tbsp for 12 servings just doesn't add much calorie-wise.
