Introduction

This is not too dissimilar to a number of sauerkraut recipes here, with the exception that I prepare it as a side dish, without pork chops/sausage/pork loin/whatever added in. Ingredients

    Sauerkraut, 2 cups
    Apple - Granny Smith 1 medium, chopped
    Raw Onion, 1/2 medium onion, chopped
    Applesauce, unsweetened, 1/2 cup
    Amber ale or stout, 6 oz
    Bacon, 2 slices, chopped
    Beef Base, Better Than Bouillon, 1 tsp
    Light Sour Cream, 3 tbsp
    Caraway Seed, 1 tbsp
    Paprika, 1 tsp
    Pepper, black, 1 tsp

Directions

Fry bacon until crisp, add onions and sautee until golden. Add chopped apple and spices and allow to cook for a few minutes. Add beer, apple sauce, and sauerkraut. Cook covered over low flame for about 30 minutes, until sauerkraut begins to caramelize, checking periodically to stir and make sure it doesn't burn. Add sour cream and serve.

Serving Size: Makes 4 servings of approximately one cup.
