Number of Servings: 6

Ingredients

    2 T canola oil
    1 medium onion chopped
    4 cloves of garlic smashed
    1 T cumin
    1 T chili powder
    1 T paprika
    2 t hot sauce
    1 28 oz can of crushed tomatoes
    1 qt low sodium chicken broth
    2 cups chicken broth
    1/4 cup loosely packed cilantro leaves
    1 t sea salt
    1 15 oz can black beans drained and rinsed

Tips

could use all low sodium broth my store only had one box when I went shopping. I've also thought about blending the beans with everything else.


Directions

heat oil on low in large soup pot
add onion and garlic
add the next four ingredients
stir and cook 5 minutes
add next 5 ingredients
cook 20 minutes at simmer
turn off heat and let cool 10-15 minutes then blend in batches to puree
add rinsed black beans bring back to simmer and serve.

Serving Size: makes 6 1 cup servings
