Ingredients

2 chicken breasts, boneless, skinless cut into strips
1 large onion sliced
2 cloves garlic, chopped
1tbs olive oil
3 tbs. dry sherry or 2 tsp. nonalcoholic vanilla
2 tsp Dijon mustard
1 tbs. sugar
1 tbs. cornstarch
1/4 tsp ground ginger
1/4 tsp ground cinnamon
salt and pepper to taste
cayenne to taste (optional)
2 oranges, peel, seed and separate into segments
3 tbs. parsley chopped
2tbs. cilantro chopped
Directions
Saute onion in oil until soft and golden. Add garlic towards the end. Put to the side.
In a small bowl mix cornstarch, cinnamon, ginger, mustard. Add sherry and orange juice, blend well.
Cook chicken on all sides. Add onions and orange juice mix - stir. Season with salt and pepper and cayenne. Bring to a boil, reduce, simmer covered for 20 minutes. Add orange segments, parsley and cilantro. Cover 3 more minutes. Serve over brown rice.
