Introduction

Ingredients
1 Med head of cauliflower (or about 2 cups of florets)
1 Cup Water
1/2 Cup Low Fat Evaporated Milk
1 Cup Low Sodium/Fat Chicken or Veg Broth
2 Tbsp Country Crock Calcium
1/3C Kraft Parmesan & Romano Cheese
Optional flavorings:
I added a little sautéd garlic in the listed margarine with parsley.
You could add curry, red pepper flakes, nutmeg.. whatever you want the sauce to morph into.
Directions
Add water, broth & cauliflower to pot. Bring to boil. Simmer until cauliflower is very soft then set aside 5 mins to cool.
Using a slotted spoon add cauliflower to a blender. Add most if not all of the remaining water (depending on how thick you want your sauce - you will be adding milk later)
Puré until very smooth and creamy.
In a saucepan, melt butter & sauté garlic for about 30 seconds. Add puré & milk, simmer for 8 - 10 mins. Add pepper or spices to your own taste.
Use over spaghetti squash, noodles, vegetables or just enjoy with a spoon ;-)
Refrigerate unused portions.
