Ingredients

2 Tbsp - Clarified butter
12 oz - Boneless stewing lamb 1/4 in. dice
3/4 cup - Onion, 1/8 in. dice
1/2 tsp - Cumin, ground
2/3 cup - Tomato, Peeled, seeded, 1/4 in. dice
1 Tbsp - Tomato Paste
1/2 cup - Lamb or Beef stock
To taste - Salt and Pepper
1/2 tsp - Granulated sugar
12 oz - Fresh okra
1 Tbsp - Clarified Butter
Directions
1. Heat 2 tbsp. of clarified butter over medium heat and brown meat on all sides. Transfer to another container as meat browns.
2. Reduce heat and add onions to the same pan the meat was browned in and cook 2-3 min. until transparent. Add cumin, tomatoes, tomato paste and cook 1 min.
3. Add stock and stir well to collect browned sediment.
4. Return meat to pan, correct seasoning and add sugar.
5. Cover and cook in a moderately slow oven or on top of stove for 1 1/2 hours or until meat is almost tender.
6. Prepare okra remove stem, leave whole.
7. Heat remaining clarified butter over medium heat and sauté okra 3 min. tossing as needed.
8. Arrange okra on top of meat; cover and cook until okra and meat are tender.
