Number of Servings: 20

Ingredients

    Salad:
    1-1/2 cups uncooked Orzo (rosamarina)
    9 cups diced cooked chicken
    3 cups diced celery
    3/4 cup sliced green onion, tops included
    4 cups fruit (pineapple, halved grapes etc.)

    Dressing:
    3 cups fat free mayonnaise
    1/4 cup lemon juice
    1/2 tsp white pepper

    Cashews (optional)

Tips

*leftover chicken or rotisserie chicken work perfect for this.
*Use whatever fruits your family like (used pineapple for calculations)
*Sprinkle cashews on top before serving (additional calories)


Directions

Cook Orzo according to package directions. Drain well.
Place in a very large bowl. Add chicken, fruit, celery, and green onions; carefully mix well.

Mix mayonnaise, lemon juice, and pepper in a separate container. Fold into salad ingredients.

Chill until serving.
