Ingredients

    Ingredients:
    1 can chickpeas, drained and rinsed
    1 sweet potato, cubed (about 1 c. total)
    1 c. celery, finely chopped
    1 c. carrots, chopped
    1 1/2 t. curry powder (I went a bit overboard here, my sweetie loves curry)
    1/2-3/4 t. garam masala (depending on how spicy you like it)
    1 t. cumin
    1 T. minced ginger
    2 t. minced garlic (Or more if you want! I am always generous with the garlic)
    agave to taste
    dash of cinnamon
    2-3 cans of tomato sauce (I have a ton of tomato sauce I'm trying to use up)
    1 can light coconut milk (For a lower fat version, use 1 c. of soy milk.)
    2 c. vegetable stock
    2 T. natural peanut butter
    1/2 c. red lentils, drained and rinsed

Tips

*Garam Masala is an Indian spice blend. It is crazy delicious. I found mine at Harmon's, and I throw it in all sorts of stuff. I also just like to smell it. Mmm...


Directions


Directions:
Combine all ingredients in a crock pot and turn to high for about an hour. Switch to low for three hours.
