Ingredients

    1 - 1 lb box of Mochiko Sweet Rice Flour
    1 C of Splenda (may substitute regular sugar of added calories)
    1.5 C brown sugar
    1 Can lite coconut milk
    3/4 C milk
    3 eggs
    1 stick of butter

Tips

To lower calories use all Splenda sugars and 2% or skim milk.


Directions

Preheat oven to 350 degrees. Melt butter and set aside. Mix flour and sugar together. Mix cooled butter, coconut milk, milk and eggs together. Pour mixture over the flour and sugar mixture. Pour into a 9x13 greased pan. Bake for 50 minutes. Turn oven off and allow to sit in hot oven an additional 30 minutes. Cool, cut and serve. Store in an airtight container.

Serving Size: makes about 77 1x1 inch pieces
