Introduction

Ingredients

    Nutiva Coconut Flour, 8 tbsp (I used this bc it is the lowest calorie coconut flour)
    Stevia, to taste
    1 Cup mashed banana
    Organic Almond Milk Unsweetened, 6 oz
    Baking Powder, 1 tsp
    A pinch of salt
    Coconut oil, 1 tbsp

Tips

If you don't want the coconut oil, you can replace it with applesauce but the oil gives it a softer texture and also a faint coconut taste.
If you don't like bananas, you can also use applesauce, dates, or pumpkin puree.


Directions

1. Preheat oven to 350 degrees farenheit. Mix all the liquid ingredients together but leave out a bit of the almond milk.
2. Add the liquid mixture to the dry mixture. (Coconut flour and baking powder)
3. Add the rest of the almond milk and mix patiently. (The batter may be crumbly at first.)
4. Taste the mixture to see if you need the stevia. Ripe bananas should provide enough sweetness already.
5.If the mixture is not smooth and easy to stir through, add more almond milk until it is, BUT BE PATIENT! Coconut flour is highly absorbent because of the fiber.
6. Grease a pan if not using a non-stick pan. You can also put them in muffin tins, shape into cookies, flatten into tarts, etc.
7. Place the dough into the pan or whatever you are using to cook the batter.
8. Place that into the oven and bake for 15 minutes.
9. Check to see whether it is throughly cooked by poking it with a toothpick. If it comes out clean it is cooked. If not, add an additional 5 minutes everything you have to check.

Serving Size: Makes 8 servings. You can shape them however you want.
