Ingredients

1 lb ground extra-lean turkey
5 whole wheat sub buns
1 clove garlic, minced
1 tsp dried oregano
1 egg white
1 small onion, thin sliced
1 14oz can Italian -style tomatoes
1/4 cup reduced-fat mozzarella cheese (optional)
Directions
Makes 4 subs:
In a food processor process 1 of the sub buns into fine breadcrumbs. Measure out 1 cup and set aside.
In a large bowl, use hands to mix ground turkey, garlic, oregano, and egg white. Shape mixture into 20 meatballs.
Heat a large skillet over medium-high heat. Add the meatballs and brown each side of meatballs. Remove the meatballs and reduce heat to medium. Add the onions to the skillet and cook until just starting to brown. Add the tomatoes with the juice and add the meatballs. Stir to coat. Allow the mixture to come to a slight boil. Reduce the heat to medium-low and cook for 20 minutes, uncovered. Split remaining subs in half lengthwise. Fill each with 5 meatballs and sauce. Top with 1 tbls of shredded cheese (optional)
