Ingredients

Salad Ingredients:
Bread, pita, whole-wheat, 1 pita, large (6-1/2" dia)
Romaine Lettuce (salad), 6 cup, shredded
Scallions, raw, 1 medium (4-1/8" long)
Cucumber, Fresh (2 Cup Sliced)
Tomatoes, red, ripe, raw, year round average, 3 medium whole (2-3/5" dia)
Chickpeas (garbanzo beans) 15.5 oz can
Athenos Reduced Fat Feta Cheese, 1 oz
Dressing Ingredients:
Parsley, 1/4 cup
Garlic, 1 clove
Sumac or sumaq, ground, 6 tsp (remove)2 Tbsp
Lemon juice, 1/4 cup
Olive Oil, 1/4 cup
*Fresh Mint, 1/4 cup
Salt, 1 tsp
Pepper, black, 1/4 tsp
Directions
Preheat oven to 350 degrees F (175 degrees C). Toast pitas 5 to 10 minutes in the preheated oven, until crisp. Remove from heat, and break into bite size pieces. In a large bowl, toss together toasted pita pieces, romaine lettuce, green onions, cucumber, and tomatoes. In a small bowl, mix the parsley, garlic, sumac powder, lemon juice, olive oil, salt, pepper, and mint. Pour over the pita mixture, and toss just before serving.
