Number of Servings: 6


    1 large banana*
    2 eggs
    teaspoon vanilla
    teaspoon baking powder, optional
    1 teaspoon cinnamon, optional


1. Mash the banana pretty well. Combine the mashed banana with the eggs, and vanilla. If desired you can add baking powder and cinnamon.
2. Heat a griddle low to medium and spray with the nonstick cooking oil.
3. Using a ladle spoon about 3 of the batter on the hot griddle for each pancake. Wait about 30 seconds to 1 minute and flip the pancakes.
4. Re-spray the griddle between each set of pancakes.
5. If desired, top with a little butter or peanut butter or any other type of nut butter.
6. Drizzle with a little syrup or agave or honey or any other liquid sweetener.

Serving Size: Makes six small pancakes that an easily serve one.
