Ingredients

    1lb. lean ground turkey
    1 cup water
    1 package taco seasoning
    1 16oz jar thick and chunky salsa
    1 can Mexican corn
    1/2 head cauliflower

Tips

To lower the sodium I make my own taco seasoning. Another way to reduce it is to use homemade salsa.


Directions

Turkey Taco Skillet
1 lb. lean ground turkey 1 pkg. taco seasoning
1 cup water 1 (16-oz) jar salsa thick & chunky
1 (11-oz) can Mexican corn ½ head cauliflower

In a food processor place broken up cauliflower and pulse until the size of rice. Heat a wok or large pan on med-high with 1 Tbls oil. Add cauliflower and a tsp salt. Stir fry for about 5 – 7 minutes. Set aside in a bowl. In the same pan over med heat, cook and brown ground turkey, breaking meat up into small pieces. Stir in seasoning mix, water, salsa and corn. Bring to a boil and then turn to low for 10 min. Add in the cauliflower and simmer for 10 minutes or until the consistency is to your liking.
(optional) Top with shredded cheese, cilantro, green onions, sour cream, tomato or lettuce.
