Ingredients

1 Muffin Tin (I used a 6 large muffin size pan)
7 oz pkg of Black Forest Ham slices
2 green onions - diced (including green tops)
3 medium white raw mushrooms - diced
Spinich - baby raw leaves
Tips
Garnish with some salsa. You can also be creative with other tasty and healthy additives such as chopped onions, tomatoes, herbs, and seasonings.
I have seen it done several ways on Pinterest. It gets two thumbs up in our home.
Directions
Spray your muffin tin with non-stick spray or use EVOO to oil the bottom and sides.
Put 1-2 slices of black forest ham in each muffin cup like a liner.
Crack one egg into each lined muffin cup and top with a little of each of the other ingredients. Then pop the pan in the oven heated to 400 for 15 minutes.
OR
Crack all eggs in a bowl and mix all remaining ingredients together (scrambled style)
Add salt and pepper to taste.
Spoon mixture evenly into ham lined cups and pop in the oven. Bake on 400 for 15 minutes.
Serving Size: Makes 6 single servings.
