Introduction

Ingredients

    Garlic, 3tsp minced
    Scallions (green onions), 1 stalk sliced
    Bell Pepper, 1 whole, chopped
    Broccoli, 2c chopped
    Bok Choy, 1 bunch, leaves and stalks separated and chopped
    Red Cabbage, 1/4 head, chopped
    Pineapple, 1 can chunks, drained
    Shrimp (or protein of choice), 1/2lb, tails removed and deveined
    Thai Kitchen Stir-Fry Rice Noodles, 1 box
    Kikkoman Teriyaki Sauce & Marinade, 1 bottle
    Nonstick cooking spray
    Warer, 1/4c

Tips

Although toasted rice noodles make a great garnish, I've found this dish is best with toasted edamame, which holds its crunch until the end.

For vegetarian or vegan, simply replace the shrimp with tofu; it's quite versatile.

For added nutrition (and a bit more of a classic recipe), add 1c chopped carrot and 1/2c sliced onion. Brown the onion with the garlic and add the carrots with the broccoli.


Directions

Spray wok or large pan with nonstick cooking spray. Add garlic, bell peppers and scallions. Cook over medium heat until garlic is browned.

Add broccoli, white stalks of bok choy and water, cook for five minutes or until broccoli is tender.

Meanwhile, prepare noodles as directed on box.

Add bok choy leaves to pan, cook until leaves wilt. Add teriyaki sauce and shrimp, simmer five minutes.

Add pineapple and noodles, mix well and serve.
