Introduction

I made this today using all the fresh veggies of spring I made this today using all the fresh veggies of spring
Number of Servings: 4

Ingredients

    1 Lg. can crushed tomatoes
    2 C. Morningstar Farms Veggie Burger Meat
    1 C. shredded carrots
    1 C. chopped green pepper
    1 C. raw onion
    1 1/2 tsp. butter
    2 Tblsp. light country crock churn style margarine
    1 tsp salt
    1 tsp pepper
    fresh parsley to taste
    fresh cilantro to taste
    fresh basil to taste
    1/2 C. parmasean cheese
    2 C. dried whole wheat pasta

Directions

sautee all veggies in butter/margarine until the onions are transluscent and starting to carmelize; then add Morningstar Farms Mealstarters veggie burger meat and stir. Add can of crushed tomato and a pinch of splenda to cut tomato acid. stir well and bring to boil. Add pasta; stir and reduce heat to medium for 20 min. stirring occassionally.

This is good warm or as cold leftovers, YUMMY
