Introduction

Ingredients

8 bell peppers (any color)
1 tube Jennie O bulk sausage
1.5 cups quinoa
3 cups water
1 carrot cut into matchstick strips
1/4 red onion
shitake mushrooms
6 slices Lite Provolone
2 jars Trader Joes Rustico Sauce
Directions
Add quinoa and water to pot. Bring to a boil and simmer until all water is absorbed.
Brown sausage. Add sliced shitake, carrot and onion and cook til softened.
Combine with Quinoa.
Cut tops off of peppers and clean. Stuff peppers with quinoa. Top with sauce and cheese. Bake at 350 until cheese has melted and peppers are hot (about 1/2 hour).
