    2.5 cup (1 large) grated zuchini (skin on)
    3/4 cup whole wheat flour
    1/2 cup panko bread crumbs (reserve 2 tbsp)
    2 large eggs, beaten
    8 tbsp grated light parmesan cheese (I used Blue Menu)
    2 tsp (more or less to taste) garlic powder
    2 tsp (more or less to taste) onion powder
    1 tsp salt
    ground pepper to taste
    cooking spray


Mix all ingredients. Using ice cream or large cookie scoop, scoop onto parchment paper (sprayed with cooking spray) lined cookie sheet. Sprinkle with reserved panko bread crumbs and spray tops with cooking spray. Bake at 400 degrees for 25-30 minutes.

Serving Size: Makes 10 good sized patties
